Released during Bourbon Heritage Month at the Kentucky Bourbon Festival, this six-year-old wheated bourbon is the first organic expression from Hidden Barn. This project began several years ago when Jackie Zykan was consulting for Journeyman Distillery in Michigan, one of the few certified organic distilleries in the United States. That’s when she started sampling and compiling some of the earlier barrels that would later become this nine-barrel batch. The nine-barrel batch, proofed at 106.2, is as limited as it is remarkable.
For me, it’s the story behind this release that makes it stand out. After years of blending, sampling, and working behind the scenes, Jackie has created something truly unique. Her attention to detail and love for the craft are evident in every sip. Now that the Neeley Family Distillery has been certified organic, we can expect this project to continue for years to come, further enriching the world of bourbon.
And that dedication shows in the glass. The nose opens with buttery caramel and sweet citrus, balanced by crisp green apple. On the palate, a peppery warmth kicks in with white pepper at the forefront, giving way to hints of tobacco and subtle oak. The finish is clean, long, and lingering with that spice slowly fading, leaving behind notes of sweet tobacco. It’s a medium-bodied bourbon that balances complexity and approachability—a perfect reflection of the care that went into its creation.
